White Chicken Chili

I’m really hitting the jackpot with crock pot recipes lately!  Last week we made this recipe for white chicken chili – we left out some of the ingredients (it’s what we do) – and it was fabulous.  The leftovers were just as good too!  It has a bit of a kick to it but it wasn’t too much, promise.  (Although it might be too much for my lovely mother and mother-in-law. haha).

White Chicken Chili

Ingredients we used:

  • 1 to 1.5 lbs raw chicken breast
  • 1 medium onion chopped
  • Pinch of salt and pepper
  • 2 tsp oregano
  • 2 tsp cumin
  • 1/2 tsp garlic powder
  • 1 (4 oz) can green chili’s
  • 2 (15 oz) cans of great northern beans, drained
  • 1 (15 oz) can white kidney beans, drained
  • 1 (14 oz) can whole kernel corn
  • 1 (14 oz) can of lower sodium chicken broth
  • 1 tbs cilantro, chopped

[The great northern beans weren’t with the rest of the beans in our grocery store.  They were in the international/Mexican aisle so if you’ve been searching forever, try checking that aisle if you have it.  Or substitute for white beans.]

I’m not sure what Forest’s technique was for putting everything in the crock pot but, knowing him, he just tossed everything in there before work, set the crock pot on low, stirred it once during during lunch, shredded the chicken when he got home from work (while it was still in the crock pot – he likes to just mash the chicken with a spatula to shred it), and then we served it in big bowls with shredded cheese on top and he added saltine crackers.


White Chicken Chili

Also, Forest would probably argue for a different name – he says chicken is always white so it should be something like White Chili with Chicken.  Call it whatever you like as long as you try it! :)
