Peyton and I made the easiest peanut butter cookies yesterday afternoon. My dad made them over the weekend for a cookout so
I the baby was obviously craving them and I’m telling you, they are SO easy! Which is the goal when baking with kids, right?!
- 1 box yellow cake mix
- 2 eggs
- 1/2 cup oil
- 1 cup peanut butter
- Preheat oven to 350 degrees. Mix all ingredients and spoon onto cookie sheets. Bake for 10 minutes. Times vary so check frequently (I had used 3 cookie sheets and the best ones were baked for 14 minutes but my dad said his didn’t need to bake as long so it depends on the oven!).
Why is it only Thursday? This week hasn’t been exceptionally busy for us but I feel like it should already be Friday!
A few thoughts for your Thursday, though, as we wait for the weekend:
This first one is two-fold, courtesy of Forest. First, Yuengling doesn’t just make beer. They also make ice cream. And they have a BUTTERBEER flavor! Which won’t mean very much unless you’re a Harry Potter fan. They only sell it in select stores so I made a trip to one of those stores last night after dinner. I did find Yuengling ice cream but they didn’t have butterbeer…. I picked up the peanut butter cup and cherry vanilla chunk and we’ll see how they are!
This week started rough (I forgot my lunch on Monday and, although it wasn’t the end of the world, I was really looking forward to those leftovers. I was up with Peyton from 2am-4:30am Tuesday morning and I slept through my alarm. I was only 30 minutes late to work but that just throws off your whole day!) I’m hoping to end this week on a high note (but really, I can only go up from where the week started!) and enjoy the long weekend!
Last weekend we had friends visiting and we spent all of Saturday at the beach with 2 babies and it was so much fun! It was a long walk from the car to the beach with 2 babies in carriers plus all of the stuff that’s required for 4 adults + 2 babies but it went much better than I imagined. This recipe looks yummy! And simple! I’ll add it to our meal plan for next week!
We don’t have any big plans for July 4th and I think this is the first July 4th weekend that we don’t have someone visiting so we’ll play it cool – backyard fun with the pool, water table and slide, maybe the beach. And of course fireworks! Our town does fireworks that we’ve watched from the Kohl’s parking lot before so we’ll probably do those unless Peyton isn’t having it (we’re usually getting ready for bed by 7:15-7:30) so we’ll see!
This is a great read for mama’s (but really all women) to struggle with insecurities wearing a bathing suit. Don’t we all!
I mowed the lawn last night after dinner and almost cried with how many weeds we have in the rocks along the back of our house and the rocks along the side of our driveway. It’s looks pitiful and I already warned Forest that we would be spending part of our weekend pulling weeds.

The dog ate/scratched a hole in the new rug – I have a post coming soon but ugh. In the back of my mind I was afraid she would but prayed that she wouldn’t. Now I’m on the hunt for new coffee table and I’m completely crushing on round leather storage ottomans (like this or this) but then I found this cushioned square one and I’m confused!
We’re having this chicken alfredo baked ziti for dinner tonight. Also, I browsed her other recipes on the blog and I think we’ll be trying several!
